El protocolo mundial de seguridad alimentaria tiene como objetivo asegurar que los proveedores cumplen con unos requisitos que garantizan la salubridad de sus alimentos.
Las empresas del sector alimentario deben disponer de los sistemas necesarios para identificar y controlar los peligros que puedan afectar negativamente a la seguridad de los alimentos mediante un sistema de Análisis de Peligros y Puntos de Control Crítico (APPCC) y contando con el firme compromiso del equipo directivo de la empresa.

In 1998 the British Retail
Consortium (BRC), responding to industry needs, developed and introduced the BRC Food Technical Standard to be used to evaluate manufacturers of retailers own brand food products. It is designed to
assist retailers and brand owners produce food products of consistent safety and quality and assist with their 'due diligence' defence, should they be subject to a prosecution by the
enforcement authorities. Under EU food Law, retailers and brand owners have a legal responsibility for their brands.
In a short space of time, this Standard became invaluable to other organisations across the sector. It was and still
is regarded as the benchmark for best practice in the food industry. This and its use outside the UK has seen it evolve into a Global Standard used not just to assess retailer suppliers, but as a
framework upon which many companies have based their supplier assessment programmes and manufacture of branded products.
Many UK, North American and many European retailers, and brand owners will only consider business with suppliers who have gained certification to the appropriate BRC Global Standard
Certification according to this standard seeks to ensure compliance with the criteria
of quality and safety described in the standard that are necessary for a company to be able to supply distributors / retailers of food products in the United Kingdom.
The BRC Certification presupposes the adoption and implementation of the HACCP methodology, the existence of a documented and effective System of Quality Management, and the control of environmental
conditions in the premises, control of the product, process and persons. This standard is currently adopted by suppliers in Europe, Africa, the Middle East, Asia, Australia, North and South America,
which is more than obvious proof that this is a global standard
